Anyone Ever Make Pannukakku?

I found a recipe for pannukakku online and have been wanting to try it for a while. I really screwed up somehow and the sides puffed up about 6" and the center was barely cooked.

Anyone have a favorite recipe or tips on how to make it?

My favorite recipe for Pannukakku starts with "go down to Suomi for breakfast..." ;)

So, I'm no help, but I'm interested to see if anyone else has any info!

Ideally that would be my favorite recipe too, however I might have a hard time convincing the wife to drive for 9 hours to get pancakes. ;)

I've never had it, so I had to Google it. Boy, it looks good! What recipe did you try?

I found a few blogs that mentioned how to make it. The ingredient amounts vary.

omg yes! i LOVE Panu!
i would imagine it to be difficult to get it to cook evenly....

you know it might behoove the local membership to go down there and ask them how it's best to do it...
if they dont give up the whole recipe, they may still give some tips.

i would LOVE to be able to cook Panu for myself!!

If I remember right, the Hill Top Restaurant on the south edge of L'anse has this on their breakfast buffet..... GREAT eatery either way....Cinnamon rolls the size of dinner plates!

Anytime someone I know is going through L'anse I give them some money to pick up some sweet rolls. Mmmmm......

Tried again on Saturday and was successful. Holy crap is that good!!!


Ingredients
3 eggs
1 cup milk
1/4 cup flour
2 tablespoons sugar
1/4 teaspoon salt

I added 1 teaspoon vanilla since most of the other recipes online include it.

Directions

1 Using an electric mixer, beat the eggs until fluffy. Add the milk, flour, sugar, and salt, beating continuously, until the mixture has the consistency of thick cream.

2 Pour into 2 buttered 8-inch round cake pans lined with waxed paper. (The batter should be only 1/3-inch deep.).

3 Bake in a very hot oven (425 degrees F) for 15 to 20 minutes.

4 Turn out onto a serving dish and peel off the waxed paper.

5 Serve hot.

6 You can make this ahead of time and reheat it before serving, although it's best served immediately after baking.

wow thats pretty simple...im surprised they dont make you sing verses from the Kalevala over the mixture and during baking :lol:
